Last time I went to a wine tasting I brought this delicious Mozzarella bruschetta with me. It was easy to put together and everyone loved it! I didn't take a picture, unfortunately, but I assure you it went over well!
I used grape tomatoes so that I didn't have to worry so much about seeds! Great for an appetizer but it can get a little messy so make sure you serve them with little plates and napkins!
Mozzarella Bruschetta
1 ball fresh Mozzarella cheese
Cherry or grape tomatoes
Fresh basil
Salt and pepper
Olive oil
Balsamic Vinegar
Baguette
Cut the Mozzarella into small cubes, the tomatoes in halves or quarters, depending on the size and chiffonade the basil.
Chiffonade sounds fancy but it's easy! Stack your basil leaves, roll into a little log shape and cut thin slices off the end of the log. You'll end up with thin strips of basil.
Mix the Mozzarella, tomatoes and basil together in a bowl. Drizzle with olive oil and a little balsamic vinegar, then add salt and pepper to taste.
Serve with thin freshly-toasted slices of baguette.
